Then the two recounted what had taken place on the way and how he was made known to them in the breaking of the bread.

While they were still speaking about this, he stood in their midst and said to them, "Peace be with you."

But they were startled and terrified and thought that they were seeing a ghost.
38
Then he said to them, "Why are you troubled? And why do questions arise in your hearts?
39
Look at my hands and my feet, that it is I myself. Touch me and see, because a ghost does not have flesh and bones as you can see I have."
40
And as he said this, he showed them his hands and his feet.
41
While they were still incredulous for joy and were amazed, he asked them, "Have you anything here to eat?"

They gave him a piece of baked fish;

he took it and ate it in front of them.
44
He said to them, "These are my words that I spoke to you while I was still with you, that everything written about me in the law of Moses and in the prophets and psalms must be fulfilled."

Then he opened their minds to understand the scriptures.

And he said to them, "Thus it is written that the Messiah would suffer and rise from the dead on the third day
47
and that repentance, for the forgiveness of sins, would be preached in his name to all the nations, beginning from Jerusalem.

You are witnesses of these things.
Jesus ate a Mediterranean type diet with Kosher components since He was part of the Jewish culture. Based on biblical references, Jesus ate a diet rich in fish, wheat, whole meal flat bread, olives, olive oil, figs, dates, the occasional lamb and red wine.
These are things we can touch.
John 21:24-25
24 This is the disciple who is bearing witness about these things, and who has written these things, and we know that his testimony is true. 25 Now there are also many other things that Jesus did. Were every one of them to be written, I suppose that the world itself could not contain the books that would be written.
John says he is a witness to this. Today, if we traveled to John Rylands Library in Manchester, England, we could see a fragment of Saint John's Gospel dated to 130 AD.
Paul writes in 1 Corinthians 15:6
6 Then he appeared to more than five hundred brothers at one time, most of whom are still alive, though some have fallen asleep.
Jesus said something for us to consider, today:
John 20:29
Jesus said to him, “Have you believed because you have seen me? Blessed are those who have not seen and yet have believed.”
2 Corinthians 5:7
for we walk by faith, not by sight.
Hebrews 11:1
Now faith is the assurance of things hoped for, the conviction of things not seen.
Philippians 4:7
And the peace of God, which surpasses all understanding, will guard your hearts and your minds in Christ Jesus.
Now may the Lord of peace himself give you peace at all times in every way. The Lord be with you all.
